<p>When to choose organic vs. not? There are definitely things that need to be considered and there are definite foods you should pay extra for organic.</p>

<p>Milk – Same with the salmon above, you should buy organic or milk that cows are not treated with rBST’s (Bovine Somatotropin) – it’s used to increase mild production and actually banned in Europe and Canada. The American Cancer Society is not clear whether it causes cancer, but does say it causes health concerns in the cows.<br />
So buy organic milk or look at the labels.</p>
<p>Ground Beef – Pink Slime was a big discussion a few months ago and it has been reported that nearly 70% of ground beef in the nation contains it. Even though the USDA says it’s safe to eat, it does cause most of us to be sick when thinking about it in our hamburgers.<br />
For this reason, it’s good to buy your ground beef at a local meat market or from local producers that don’t use national processing plants.</p>
<p>Canned Tomatoes – Most canned tomatoes contain BPA (Bisphenol A) and are controversial due to its potential negative health effects. Many campaign against its use when pregnant and for small babies and studies have linked it to heart disease and adult diabetes.<br />
Buy organic or BPA Free Tomatoes.</p>
<p>Chicken – Salmonella is the most common concern and is so common in raw chicken that the government assumes it’s there and treats for it. You should definitely avoid cross-contamination and cook your meat accordingly.<br />

<li>These are excellent in place of Pumpkin Pie for watching your calorie intake. The muffins on average are about 47 calories compared to an average or 323 calories for a slice of Pumpkin Pie. The fat grams for the muffins are anywhere from 1 to 2 grams versus the average of 14 grams for the slice of Pumpkin Pie.</li>
<li><em>Recipe for the Pumpkin Spice Muffins:</em></li>
<li>1 – 15 ounce can of Pumpkin</li>
<li>1 – serving of a Spice Cake Mix</li>
<li>1 cup of water</li>
<li>Place cupcakes in the oven at 350 degrees for 20 to 25 minutes.</li>
</ul>
<h2 id="caulifloweraugratin">Cauliflower Au Gratin</h2>
<ul>
<li>Another great substitute for regular potato au gratin of even regular full fat mashed potatoes. One cup of real mashed potatoes are approximately 237 calories and 9 grams of fat and this cauliflower au gratin casserole is about 75 calories and 3 grams of fat per serving.</li>
<li><em>Recipe for the Cauliflower Au Gratin:</em></li>
<li>1 head of cauliflower (2 if small)</li>
<li>½ to 1 cup of water</li>
<li>½ onion chopped</li>
<li>1 to 2 cloves of fresh garlic</li>
<li>3 TBS butter</li>
<li>1 to 2 cups of low fat cheddar (or flavor of your choice) cheese</li>
<li>1 tsp sea salt</li>
</ul>
<p>½ tsp pepper</p>
<ul>
<li>Extra virgin olive oil (small dash)</li>
<li>Preheat oven to 350 degrees. Steam the cauliflower for about 10 minutes in the water over medium heat. Sauté onion and garlic in the butter and olive oil until caramelized. Place the cauliflower in a baking dish and mash with a potato masher until you have small pieces. Add the onion/garlic mixture and the cheese and top with the French fried onions (if using them) and bake for about 10 to 15 minutes until the cheese is melted. Serve with salt and pepper to taste.</li>

Healthy Thanksgiving Recipes
Pumpkin Spice Muffins

	These are excellent in place of Pumpkin Pie for watching your calorie intake. The muffins on average are about 47 calories compared to an average or 323 calories for a slice of Pumpkin Pie. The fat grams for the muffins are anywhere from 1 to 2 grams versus the average of 14 grams for the slice of Pumpkin Pie.
	Recipe for the Pumpkin Spice Muffins:
	1 – 15 ounce can of Pumpkin
	1 – serving of a Spice Cake Mix
	1 cup of water
	Place cupcakes in the oven at 350 degrees for 20 to 25 minutes.

Cauliflower Au Gratin

	Another great substitute for regular potato au gratin of even regular full fat mashed potatoes. One cup of real mashed potatoes are approximately 237 calories and 9 grams of fat and this cauliflower au gratin casserole is about 75 calories and 3 grams of fat per serving.
	Recipe for the Cauliflower Au Gratin:
	1 head of cauliflower (2 if small)
	½ to 1 cup of water
	½ onion chopped
	1 to 2 cloves of fresh garlic
	3 TBS butter
	1 to 2 cups of low fat cheddar (or flavor of your choice) cheese
	1 tsp sea salt

½ tsp pepper

	Extra virgin olive oil (small dash)
	Preheat oven to 350 degrees. Steam the cauliflower for about 10 minutes in the water over medium heat. Sauté onion and garlic in the butter and olive oil until caramelized. Place the cauliflower in a baking dish and mash with a potato masher until you have small pieces. Add the onion/garlic mixture and the cheese and top with the French fried onions (if using them) and bake for about 10 to 15 minutes until the cheese is melted. Serve with salt and pepper to taste.

This fat clogs your arteries and puts you at risk for high blood pressure, stroke and heart disease.</li>

<h2 id="unsaturatedfat:thehealthierfat">Unsaturated Fat: The Healthier Fat</h2>

FAT: What is it?
What do you think of when you hear the word FAT?

	Stick of butter?
	Greasy hamburger?
	Excess body weight?

Fat really is important to keep our bodies healthy. We just need to know the right kinds of fat.

	Fat is a nutrient: Just like protein, carbs and vitamins.

<li>Use plastic and paper serving items whenever possible.</li>
<li>Have “jobs” for certain family members to do and ask in advance.</li>

<li>Each week have something you will do to prepare such as wash curtains, vacuum blinds and windowsills, wash windows or clean baseboards.</li>
<li>VolunTOLD family members to assist you with some of your list.</li>
<li>Let go of the guilt if not all you want gets done.</li>
<li>Keep It Simple when planning on what you need to do.</li>
</ul>
<h2 id="giftbuying">GIFT BUYING</h2>
<ul>
<li><em>Gifts, gifts and more gifts! Why do we think we need to not only buy everyone a gift, but also make sure it’s the perfect gift??? How can we manage this with family, friends and those extras we need in case someone gives us a gift?</em></li>
<li>Financially prepare with a Christmas club account.</li>
<li>For larger families, draw to purchase just for one family member.</li>
<li>Make some of the gifts (handmade makes some of the best presents)</li>
<li>Give of your TIME! Elderly, children, parents, etc. need time more than gifts.</li>
<li>Hand make gift certificates. It can be for time, lunch, cleaning, errands and many other things. This will extend the gift throughout the year!</li>

<li>You will feel in control and powerful during a time of year that can be stressful to so many others!!!</li>
